ANZAC BISCUITS

Ingredients:

Chantals Brown Rice Syrup  ¼ cup
Coconut Oil 125g
Rapadura sugar or Brown sugar 1/3 cup
Baking Soda 1 teaspoon
Boiling water 3 tablespoons
Rolled Oats 2 cups
Coconut thread 1 cup
Wholemeal Flour ½ cup


Directions:

Preheat oven to 180°C/355 Fahrenheit. Line a baking tray with baking paper.

1.  Place brown rice syrup,  coconut oil and brown sugar in a medium saucepan and melt over a low heat, mixing well.

2.  Mix baking soda with boiling water to dissolve, then add to melted butter mixture in the pot, along with the rolled oats, coconut and flour. Stir all ingredients together until well combined. Leave for a few minutes until cool enough to handle.

3.  Roll heaped tablespoons of mixture into balls and arrange on prepared baking tray, Flatten slightly with the back of a fork. Bake for 15-18 minutes or until light golden brown.

Allow to cool completely on a wire rack before storing in an airtight container.
