STICKY DATE PUDDINGS WITH CARAMEL SAUCE

STICKY DATE PUDDINGS:

3/4 cup dates

2 ripe bananas

3 Tbsp coconut oil

3 eggs

1 tsp vanilla extract

1 cup ground almonds

1/2 cup tapioca flour

1 & 1/2 Tbsp cinnamon

1/2 tsp baking soda

Pinch of sea salt 

CARAMEL SAUCE:

 200ml coconut milk or cream

2 Tbsp coconut sugar

1 Tbsp maple syrup

1 tsp vanilla extract

1/4 tsp sea salt

  1. Soak the dates in boiling water for 5-10 minutes and then drain. 
  2. In a food processor blend together the banana, eggs, dates, coconut oil and vanilla. Pulse in the dry ingredients until just combined or mix together in a bowl. 
  3. Pour the batter into individual muffin cases or ramekins. Cook the puddings for 25-30 minutes or until cooked through. 
  4. To make the caramel sauce, place all ingredients into a pot on medium heat. Bring to the boil stirring constantly. Reduce to a gentle boil and stir regularly until the sauce reduces down and thickens, this should take about 15-20 minutes.
