Waffles
1¾ cups flour - organic zentrofan wholemeal (wholewheat or mixed flours - soya, rice, millet) 1 tab aluminium-free baking powder ½ teas seasalt (or to taste) ½ cup wheatgerm ¼ cup cold pressed oil - olive or safflower 1½ cups yoghurt, soya milk, water or juice ½ cup sunflower seeds ) can use ½ cup pumpkin kernels ) less 3 free-range eggs - separated
- Sift flour into bowl with baking powder and salt. Add wheatgerm
- Combine egg yolks and oil. Beat well. Gradually beat in milk.
- Pour milk mixture into dry ingredients and mix lightly.
- Stir in sunflower seeds and pumpkin kernels.
- Beat egg whites until stiff but not dry and fold into the batter. Drop the mixture onto a preheated and oiled waffle iron and bake until lightly brown
