Tabbouleh
1 cup fine organic cracked wheat (bulgar wheat) 2 cups finely chopped parsley 3 spring onions, finely chopped ½ cup finely chopped mint ¼ cup lemon juice ½ teas salt ¼ teas black pepper 1 lettuce washed and torn into bite-sized pieces ¼ cup cold pressed extra virgin olive oil 3 organic tomatoes, finely chopped
- Soak cracked wheat in cold water for 1 hour (or pour over boiling water and leave 15 - 20 minutes.) Drain thoroughly.
- Mix in parsley, shallots, mint, lemon juice, salt and pepper. Chill.
- Just before serving, gently mix in lettuce, oil and tomatoes.
