Hearty Bean Hotpot
1 kilo pinto beans, cooked (about 2 cups of dried beans) - this amount may be reduced - it produces a big pot of beans 3 - 4 medium onions, chopped 1 clove garlic, minced ¾ cup butter or margarine, or ¾ cup extra virgin olive oil or cold pressed canola ¼ cup vinegar Chilli powder to taste 1 tab dry mustard ½ teas cumin 2½ cups tomato sauce - use one without additives - as natural as possible 1 tab sugar - raw or brown 2 tab water
- Saute onions and garlic in oil or butter until clear.
- Stir in chilli powder, mustard and cumin.
- Add tomato sauce, sugar, vinegar and water. Add slowly to cooked drained beans, cook slowly for 15 minutes, or until flavours are blended.
