Gluten Free Bread - for Breadmaker

Handy Hints when making Gluten Free Bread

  • Most recipes will require the use of Xanthan Gum or Guar Gum. These powders are a substitute for gluten, which is necessary for breadmaking.

  • Use the Rapid medium setting on your breadmaker when baking Gluten Free bread.

  • For optimum results, follow the recipe procedure below.

  • Do not use the Time Delay setting when making Gluten Free bread, as the ingredients will spoil, preventing the bread from rising.

  • The bread may be difficult to remove from the bread pan. Allow the bread to cool for 15 minutes, loosen the sides with a plastic spatula, and gently shake out from bread pan.

  • Allow the bread to completely cool before slicing.

Method:

  • Combine dry ingredients in a large bowl. Combine the wet ingredients in a small bowl. Gently fold the wet mixture into the dry ingredients.

  • Place the mixture into the bread pan.

  • Place the bread pan into the breadmaker. Select the Rapid Medium setting and press Start.

  • Close the lid and allow the breadmaker to complete bread cycle.

Note: You may need to scrape down the sides of the bread pan with a plastic spatula to combine the ingredients. Do this within the first 10 minutes of the cycle.

Pumpernickle Bread

Dry Ingredients
2¼ teas granulated yeast
200g brown rice flour
60g tapioca flour
3 teas xanthan or guar gum
3 teas caraway seeds
1½ teas salt  
½ cup skim milk powder  
3 teas cocoa  
3 tab sugar  
1½ teas grated orange peel

         

Wet Ingredients
3 free-range eggs
3½ tab molasses
1 teas cider vinegar
3 tab canola oil
375 mls water

 

Brown and White Rice Bread

Dry Ingredients
2¼ teas granulated yeast
200g white rice flour
100g brown rice flour
1¼ teas xanthan or guar gum
1½ teas salt  
½ cup skim milk powder   
3 tab sugar  

          Wet Ingredients
3 free-range eggs
1½ teas cider vinegar 
¼ cup canola oil
375 mls water

 

Cheese Bread

Dry Ingredients
2¼ teas granulated yeast
2 tab sugar
1 teas salt
200g white rice flour  
100g brown rice flour  
¼ cup skim milk powder  
3½ teas xanthan or guar gum   
1 tab minced onion  
1 tab poppy seeds  
1½ teas celery seeds  
½ cup cheddar cheese, grated

          Wet Ingredients
3 free-range eggs
3 tab canola oil
425 mls water

 

Cardamon Flavoured Fruit Bread

Dry Ingredients
2¼ teas granulated yeast
200g white rice flour
40g tapioca flour
80g potato flour
2½ teas xanthan or guar gum
½ cup skim milk powder   
1½ teas salt  
3 tab sugar  
2 teas ground cardamon  
½ cup mixed fruit, chopped

          Wet Ingredients
3 free-range eggs
1½ teas cider vinegar
¼ cup canola oil
375 mls water
