Gado-Gado - Vegetables with Peanut Sauce
3 large potatoes - boiled 250g fresh bean sprouts 500g green beans 3 carrots ½ small cabbage 3 hard boiled eggs
- Wash and steam vegetables. Serve in large dish, covered with sauce. Top with chopped egg and sprouts.
Peanut Sauce:
7 tabs peanut oil (may use less) 1 - 2 cloves fresh garlic 1 small chopped onion 1 teas sambal oelek (chilli paste) 1 tab lemon juice 1 tab tamari (natural soya sauce) 375g crunchy peanut butter ½ tab raw sugar Coconut cream (optional)
- Heat oil and fry onion and garlic until golden. Remove from oil and drain.
- In remaining oil add sambal oelek, lemon juice, tamari.
- Remove from heat and add peanut butter. Stir well until blended. Add onion and garlic.
- Add coconut cream if desired to get a smooth sauce consistency (can use water).
- Pour over vegetables.
