Tofu Kebabs
Hard/firm tofu - marinated for a few hours, after washing and cutting into cubes.
MARINADE
1 cup cider vinegar 1 tab tamari or shoyu (natural soya sauce) - shoyu contains wheat 2 cloves crushed garlic 1 small piece of fresh ginger - peeled and grated
To this basic marinade may be added:
Cummin Mirin (rice wine) Sherry Black peppercorns Turner ic Cardamon - powdered
You will need bamboo kebab sticks or metal skewers. Put tofu onto skewers with:
pineapple pieces mushrooms onions olives tomato
BBQ until browned. Serve with peanut sauce (see Gado Gado recipe) or yoghurt sauce.
