Tofu Cheesecake Crust: 2 cups whole meal flour 1/4 cup raw sugar (optional) 1/2 tsp cinnamon butter and water Rub flour into butter, sugar and cinnamon - add water slowly, pat into pie pan and bake till lightly browned. Tofu Filling: 450g Tofu 1/2 cup peanut butter (or almonds) 1/2 cup honey 2 Tbsp lemon juice 11/2 Tbsp natural vanilla Blend all ingredients in a blender. Add variations: Like soaked dried apricots Roasted and crushed hazelnuts and carob powder to taste Or use agar or arrowroot to make a glaze to pour over sliced fruit strawberries of Kiwifruit
