125g butter
125g sugar
1 egg
250g flour
Vz teas baking powder
pinch salt
Cream butter and sugar, add egg and blend well. Add sifted flour and baking powder.
Bake at 180°c for 15 - 20 minutes - until golden.
Double this mixture will give you enough for 3 dozen traditional (top and bottom crust) Christmas Mince Pies, made in patty tins. Dust with icing sugar when ready to serve.
