Pavlova Roll
4 egg whites
125g castor sugar
Line a sponge roll tin with baking paper. Ensure the paper comes up the long sides to make removal easier. Beat egg whites until stiff. Gradually add castor sugar and beat until dissolved. Spread into lined tin. Bake at 180°C 10 -15 mins or until golden. Turn out immediately onto a piece of greaseproof paper generously spread with castor sugar. Spread with fruit - fresh berries, chopped up kiwifruit, or drained canned fruit (berries or crushed pineapple), then with whipped cream. Roll carefully to avoid cracking. Chill for at least 2 hours before serving.
