RICE WITH CASHEWS AND COCONUT CREAM
l 1/2 cups cooked brown rice (cook 1/2-3/4 cup brown rice in 1-1 1/4 cups water) (can use basmatti)
125 grams(4oz) cashew nuts
60 grams (2oz) butter
1 small chopped onion
1 tsp curry powder
1/2 cup coconut cream
Drain rice and keep hot. Melt butter in a fry pan gently saute' onion and curry powder. Add cashews and saute till lightly brown. Add the rice to the pan and toss with other ingredients. Finally pour in coconut cream and mix well into rice dish. Serve.
