Fruit and Nut Christmas Ring
250g brazil nuts
250g almonds
125 figs
125g chopped peel
125g red/green cherries
125g broken up pineapple rings
125g your choice of papaya, glace apricots or peaches, dates, raisins
3/4 cup flour
3/4 cup honey
1 1/2 teas baking powder
3 eggs, beaten
1 teas vanilla
pinch of salt
Grease and line ring or 23cm square tin - the ring tin makes a lovely Christmassy wreath. (Greaseproof paper sticks to the cooked cake, so it's worth using baking paper.)
Mix all ingredients together and bake at 130°C for 2 hours.
