DUKKAH
500g almonds and/or hazelnuts
100g sesame seeds
100g pistachios
50g coriander seeds
50g cumin seeds
50g fennel seeds
Maldon sea salt
freshly ground black pepper
Roast the nuts and seeds in a low oven about 100oC until pale golden. Allow to cool then grind coarsely in the food processor. Stir in about a tsp of salt and quarter a tsp of pepper.
