Christmas Fruit Mince
400g raisins
250g mixed peel
250g sultanas
250g currants
1 large apple
3 cups brown sugar
1 teas nutmeg
1 1/2 teas mixed spice
150ml rum or brandy
rind and juice of 1/2 lemon and 4 orange
Chop raisins and mixed peel. Grate apple. Put with remaining ingredients in bowl and mix well. Cover and leave one week, stirring each day. Spoon mixture into jars and seal.
SERVING SUGGESTIONS:
Use shortcake to make traditional pies
Use phyllo pastry for a lighter, crisper version
Mix with apple
Heat, and serve over icecream or waffles
Use it to stuff baked apples
